did you resolve the problem? Seems I am having exact same issue with my Daikin Altherma 3 R 8kW.
In my case is very periodic, in 90% of cases happens every second cycle between defrost. See picture below:

The short answer is no.
I don’t recall ever noticing the problem after defrosts, I don’t have many defrosts as I have done the best I can to minimse them.
I noticed this happening at the start of DHW runs and heating runs.
I would sit and watch start ups and then stop and restart manually when I saw the issue.
Not a long term solution and I still don’t know for sure what the cause is.
I saw it again with DHW in September as the outside temperature reduced so my solution is to heat DHW in two steps, the first DHW run being 10 minutes (the minimum I could set) and then a gap of 10 minutes (again the minimum I could set) and the a normal DHW cycle of up to 90 minutes.
This works and if there is excessive electricity consumption at the start of a DHW run it is short lived.
My space heating solution is to not turn it off!
Then there is only one restart (actually two because it runs for five minutes between DHW schedules) every 24 hours.
This seems to work and I haven’t seen the issue when space heating resumes after heating DHW.
I haven’t reread the topic so I can’t remember any solutions or explanations.
I assume that there is some sort of temporary problem with flow of something within the heat pump that consumes a comparatively large amount of electricity compared to the heat produced.
I have no other explanation or solution, sorry.
