I should developp a Single Phase power meter with STM 32 Nucleo and I have some questions about it. Do we need here external sensors for current and voltage? And does the current need to be proceded with the onboard ADC?
It would be great if someone could recommend me some documents about this subject

I think you should read through the ‘Learn’ section of this website. There you will find much information about measuring currents and voltages, and how to calculate the power.
For your safety, you MUST use voltage transformers and current transformers to give you a safe, isolated version of the supply voltage and current.
If there are things in the ‘Learn’ section that you do not understand, do not be afraid to ask.
