Read on the app documentation that it’s possible to add a day and night tariff. I want to be able to look on to my app and see what my total cost for the day, but it only appears I can put 1 cost in.

Click on ‘Apps’ and then add, there are some time of use apps. Note the development tag - they are exactly that, but @TrystanLea knows more.
Sorry when I meant app, I meant the EmonCms app fro andriod.
No is the short answer. The ‘App’ referred to in the docs, is one within the EmonCMS system not a separate one for Android/IOS.
