Yes. If it’s your own emoncms on your Pi, no restriction at all, apart from data storage. The default sketch in the emon part of the Pi records to 2 decimal places every 5 s, but you can change that if you wish by editing, recompiling and reloading the sketch.
(Beware - it records to 2 decimal places. That doesn’t mean it is accurate to that. It will only be as accurate as you can calibrate it. Out-of-the-box, most people find it’s within about 5%.)
