Could someone point me to instructions on how to setup an IoTaWatt so it can post its data to an EmonPi as a local Emoncms server.

You would use the instruction in the github wiki for connecting to emoncms Home · boblemaire/IoTaWatt Wiki · GitHub

The server url would be:
HTTP://192.168.1.104/emoncms
(Use your IP address from the LCD. Display on the pi.

Leave the EmonCMS userid field blank.
